Baking Equipment in Kenya Explained-Baking Pans

Here at Amari Quickbreads, we like to help out our home-baking fans as much as we can.  We’ve decided to share some of our knowledge on baking equipment so as to make it easier for you while choosing your baking equipment. We hope these series of posts will be helpful to you.

I. BAKING PANS

There are many different kinds of pans and sizes used in baking. It is important that you use the correct size and shape to ensure the right texture and appearance of your baked goods.

1. Spring form Pan

– This is a round pan, used for making cheesecakes and other desserts that are tricky to remove from their pans. It has a bottom that is separate from the side. A clamp holds the pan together and opens to allow the side to easily be pulled away from the baked dessert.

2. Pie Tins/Pans

– Generally,pies are baked in a deep pan with sloped sides that can hold a large amount of filling. There is a wide range of materials for pie plates; oven-proof glass, glazed ceramic, heavy foil, aluminum,  tinned steel, stainless steel and non-stick coated steel.

3. Standard Muffin/cup-cake Pans

– These pans are available in 12 and 6-cup pans. The standard muffin cup is about 2-3/4 inches in diameter and 1-1/8 inches deep. It holds at least 1/2 cup batter.

4. Jumbo Muffin Pans

– These are available in 6-cup pans, the jumbo muffin cups are at least 3 inches in diameter and 11/2 inches deep. Each jumbo muffin cup holds approximately 1 cup batter.

5. Mini-Muffin Pans

– These pans are available in 12 to 24-cup pans, the mini muffin cup is approximately 13/4 inches in diameter and 7/8 inch deep. Each muffin cup holds approximately 2 tablespoons batter.

6. Loaf Pan

– Loaf pans are used to make quick breads, brioche and meat loaf. Aluminum loaf pans can turn out tender cakes, while dark, non-stick or glass pans will produce a crunchy, chewy crust.

7. Bundt/ Tube Pan

– This deep pan has a hollow tube in the center that promotes even baking. Most of them have removable bottoms. It is also known as an angel food cake pan.

8. Ramekin

– A ramekin is an individual baking dish that resembles a miniature souffle dish, it is about 3 to 4 inches in diameter. They are usually made of porcelain or earthenware and can be used for both sweet and savory dishes; either baked or chilled.
A tiny baked pastry filled with a creamy cheese custard is also referred to as a “Ramekin.”

9. Souffle Dish

–  These dishes are oven proof and come in a variety of sizes ranging from 3 1/2 ounce to 2-quarts. It is round and has straight sides to facilitate the souffle’s rising.

10. Baking/Cookie Sheets

– It is perhaps one of the most essential pieces of bake ware; these flat, rigid sheets of metal are used to bake cookies, breads and biscuits. It usually has one or more turned-up sides for ease in handling. Common sizes for baking sheets are; 17×14 inch & 12×15 inch. For even heat circulation, baking sheets should be at least 2 inches smaller all around the interior of the oven. The most common kinds of baking sheets are aluminum, dark non-stick and insulated sheets.

11. Cake Pans

– These pans are used to make cakes. Just like loaf pans, aluminum cake pans can turn out tender cakes while dark, non-stick or glass pans will produce crunchy, chewy crusts. They come in different shapes and sizes e.g. Round, square, love-heart shaped, bible-shape, flower, rectangle or sheet size etc.

Many of these pans can be found in most leading supermarkets in Kenya or kitchen-ware stores like ‘Walibai Karim Ltd’ located on Biashara street in the Nairobi CBD or Topserve Ltd on Accra Rd in Nairobi CBD. You can also get baking tins in the jua kali section in your county, they have an area where artisans focus on baking pans and sheets for sale.

  1. Hey Maureen, awesome blog this of yours but i have several questions for you. I have been looking for some basic ingredients such as cinnamon and nutmeg but they are a bit hard to come by, could you please pinpoint me to a location i can find them?? Thanks

  2. Thank you so much. As for the Cinnamon & nutmeg, they are actually both easily found in supermarkets in Nairobi. Just go to a Nakumatt, Tuskys or Chandarana they have quite a large assortment of spices and even in other towns I've seen them in Nyeri & Karatina so I'm sure other towns with these supermarkets have them.   4. Hi great blog, could you tell me where i can purchase Muffin Pans suitable for use in a Micro wave oven. I have searched and all i get is metallic muffin tins which are not suitable for use in a microwave. Thx. in advance.

For all the above equipment (Pans), as stated above, you can purchase them in a supermarket like Nakumatt or Tuskys, you can also go the Nairobi CBD & get them on Biashara street in a shop called “Walibai Karim Co.” (They have a sign next to their name that says “WE CUT KEYS”) Another place that you can check them out for a lower price, but they may not have the muffin pans is the “Jua Kali” people who make pans. I hope that helped ^_^

  8. Hi there thank you. Unfortunately for the black food color I haven't found any either 😦 To create black food color, I usually do it myself by mixing equal parts of red, yellow & blue first, then incrementally adding cocoa pwdr & adding red or blue until it's a black color. You can't use too much of it on the baked products though cuz it has a very unpleasant taste, but it def. gives you the black color. It's a bit tedious but def possible.
    I have never seen an ivory color yet either but I'm always on the look out and will let you know if I find any. The only other alternative is to purchase them online & have them shipped here maybe through wilton.com or ebay. Hope that was helpful, thanks.

  11. HI there, for basic equipment, go to our “Baking Equipment in Kenya Explained” series, there are different posts on equipment you can use. As for the mixer, just go to any major supermarket like Nakumatt or Tuskys and you'll find them in different sizes and brands. You can also go to kitchen appliance shops like “LG” or “Ramptons” in the CBD. I hope that was helpful, thanks and good luck.

  12. Hi, do you know where I can buy baking foils for cinnamon snails. 1 cm high by 8 cm wide? I have checked in all Nakumatt and Uchumi outlets with no success. Any help in the right direction will be appreciated.

  14. Hello, not sure if you were successful with the black color and I know this is way after. However wanted to let you know that Walibhai Karim on Biashara street in Nairobi CBD sell Black color gel paste. You can try it out
