Surprisingly, pancakes are also a kind of quick bread, hence the name pan-cakes. Once in a while I’ll wake up in the morning and just feel like having some pancakes. I especially love American-style fluffy pancakes.
I love using the recipe below; you can change up the flavor to make orange-flavor OR to make plain vanilla or Vanilla chocolate chip pancakes.
Here’s my recipe:
Pancake Ingredients:
- 1/3 cup Milk (appx. 85 ml)
- 1/4 cup Sugar (50 gms)
- 1 cup Self-Rising Wheat flour (125 gms)
- 1 Egg
- 1/8 cup Un-salted Butter (50 gms) *You can also use Margarine, if you do – don’t use salt.
- Pinch of salt (1/8 teaspoon)
- 1 teaspoon Vanilla Flavor (5 ml)
- Extra vegetable oil for pan.
P/S: You can also use Orange juice and rind to make Orange Pancakes
Directions:
- Measure the flour in a separate medium bowl. In a small bowl; beat the egg and vanilla flavor together.
- Measure the salt, sugar and butter (if using margarine – don’t use salt) into a large bowl.
- If making Orange Pancakes: wash the orange and grate it for the rind and set aside in a plate. Then squeeze the orange for juice and set aside in a cup.
- With a whisk or mixer; beat the sugar and margarine/butter in a large mixing bowl until the mixture is creamy and whitish. Add the egg mixture and mix until well combined.
- Add half the flour mixture into the wet ingredients while gradually adding milk as you whisk. When well combined; add the 2nd half of flour and mix until there are no lumps in the batter. The pancake batter should be a smooth and thick consistency; not too runny. (If making the Orange pancakes; add a tablespoon of Orange juice and the rind and slowly fold until thoroughly blended.)
- 5.) Heat a frying pan on medium heat; then add a bit of oil.
- 6.) Pour about 2 to 3 spoonfuls of batter using a large spoon or ice-cream scoop onto the pan, make sure to keep space between them. Spread just a bit with the back of a spoon – though make sure it’s a thick height e.g. 1/4 or half an inch. Cook the pancakes for about 1 – 2 minute; until bubbles appear on the surface.
Flip with a spatula, add a small amount of vegetable oil and cook until brown on second side.
You can serve your fluffy delicious pancakes on a plate.
P/S: If you don’t have self-rising flour; you can use all purpose flour and add 1/4 teaspoon of Baking powder.
- Another variation of this recipe; you can add about 10 grams or a 1/8 cup of dark chocolate chips to make Chocolate chip pancakes – just fold them in at the end after your batter is ready.

Serve with butter & syrup on top OR garnish with fruits like ripe bananas or strawberries. How do you like to eat your pancakes?
