Simple Vanilla Cake Recipe

Here’s a Simple Vanilla Cake recipe.

It’s also one I use when doing a half Kg cake recipe and you can double the ingredients to get a 1Kg yield.

Ingredients required:

  • All – Purpose Flour   – 163 gms
  • Baking Powder         – 4 gms
  • Sugar                          – 90 gms
  • Margarine or unsalted Butter – 90 gms
  • Vanilla Essence        – 5 ml (1 teaspoon)
  • Eggs                           – 2 pcs
  • Milk                           – 70 to 100 ml
  • Salt (add only if you use the un-salted butter) – 1/4 teaspoon

Directions:

  1. Pre-heat the oven to 180°C or 350°F. Grease and flour a round/square 6-inch cake pan and set aside.
  2. In a medium bowl, measure and sift the flour and baking powder and set aside. (*if using un-salted butter; add the salt in after sifting the dry ingredients)
  3. In a large bowl, measure the butter/margarine and sugar. Then in a small bowl, break the two eggs and vanilla essence and beat them together.
  4. Cream the sugar and margarine with a whisk or mixer until white for about 3 to 5 minutes. Pour in the egg mixture and beat for about a minute until well incorporated. Add half the dry ingredients and fold them in with a spatula. Then add the remaining half of the dry ingredients and fold them in while gradually adding the milk. Ensure your batter is smooth and has a 2 to 3 second drop consistency.
  5. Pour the batter into your prepared pan and place in the middle rack of your pre-heated oven.
  6. Bake for about 35 to 40 minutes (for 1 Kg; about 40 to 60 minutes) or until a clean knife or skewer inserted comes out clean.
  7. Remove the cake from the oven and let it cool in the pan for about 5 to 10 minutes. Remove the cake from the pan and let it cool completely on a cooling rack or tray. Your cake is now ready for frosting.
